April's Foodie Holidays

Had you heard that April brings a lot more than  showers and spring flowers?
According to my friends at Midwest Dairy and the Kansas Farm Food Connection,
we've got  5 Foodie Holidays to enjoy in April!

April 2--National PB and J Day

   April 11--National Cheese Fondue Day

 April 12--National Grilled Cheese Day

It's no April Fool's joke...
each special holiday is made for enjoying dairy foods!

No Foolin'--Dairy Makes Sense!

I would know it was a joke if the farmers came into the kitchen and told me they wouldn't be hungry today!  I'm looking forward to trying Easy Cheesy Chicken Enchiladas With Yogurt. It's no joke--Dairy Makes Sense!


Easy Cheesy Chicken Enchiladas With Yogurt

3 ounces cream cheese
2 cups chopped, cooked chicken breast
12 ounces chunky salsa
1 cup Mexican-blend cheese,shredded
8 (6 inch) whole wheat tortillas
Yogurt Sauce:
2 cups low-fat plain yogurt
1 cup chopped cilantro
1 teaspoon ground cumin

Preparation:P
Heat cream cheese in large skillet over medium heat until soft. Stir in chicken and 1/2 cup of the salsa; mix well. Add 1/2 cup shredded cheese; stir until melted.Spoon about 1/3 cup of the chicken mixture onto each tortilla; roll up. Place seam side down in 12x8 inch baking dish. Top with remaining salsa and cheese. Bake at 350 degrees F. for about 15 minutes or until heated through. Serve with yogurt sauce.

For the yogurt sauce, combine yogurt, cilantro and cumin. Chill until needed.

April Fool's Day Treat

Although I didn't prepare Easter lunch, we enjoyed a feast at my Mother's table today. Ham is the traditional meat that we enjoy for this holiday meal and  fortunately
for us, we were sent home with the tasty leftovers to enjoy this week.

 There will be plenty of ham sandwiches but for variety, I plan to use part of the left-over ham  for a Hash Brown Quiche that we can enjoy for breakfast,lunch or supper. It might even be a good April Fool's Day treat!

Hash Brown Quiche

3 cups frozen loose-pack shredded hash browns,thawed
1/3 cup butter,melted
1 cup diced fully cooked ham
1 cup (4 ounces)shredded cheddar cheese
1/4  pepper-jack cheese,grated (optional)
1/4 cup diced green pepper
2 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Press hash browns between paper towel to remove excess moisture. Press into the bottom and up the sides of an ungreased 9-in. pie plate. Drizzle with butter. Bake at 425 degrees for 25 minutes.
Combine ham,cheese and green pepper; spoon over crust. In a small bowl, beat eggs,milk,salt and pepper. Pour over all. Reduce heat to 350 degrees; bake for 25-30 minutes or until a knife inserted near the center comes out clean. Allow to stand for 10 minutes before cutting. Yield: 6 servings.
